Apple pie enchiladas
Homemade Apple Pie Filling or 1 (21 ounce) can apple pie filling
6 (8 inch) flour tortillas
1 teaspoon ground cinnamon
1/2 cup butter
FULL RECIPE :
°Homemade apple pie filling or 1 (21-ounce) package apple pie filling
°6 flour tortillas (8 inches)
°1 teaspoon ground cinnamon
°1/2 cup of butter
°1/2 cup white sugar
°1/2 cup brown sugar
°1/2 cup of water
– Preheat oven 350 degrees F.
– 9″ x 13″ baking dish.
Microwave the tortilla if needed to make it easier to roll.
Scoop 1 tablespoon heaping 1/4 cup of the tortilla from the center of each tortilla, and sprinkle with cinnamon evenly.
Roll the tortilla up and place it seam side down in a greased baking dish.
In a medium saucepan, bring the butter, white sugar, brown sugar, and water to a boil.
Reduce heat & simmer for 3 mn, stir constantly.
Pour the sauce over the enchiladas, sprinkle with additional cinnamon on top if desired, and let stand for 45 minutes.
Bake in a preheated oven for 20 minutes, or until golden.
Serve warm with vanilla ice cream or whipped cream and top with desired amount of caramel sauce.
